Ingredients:

  • ½ medium onion, diced or 2 shallots

  • 4-6 garlic cloves, minced

  • 3 medium carrots or 2 cups, peeled and thinly sliced

  • ¼ cup cashews or sub raw hemp seeds

  • 2 cups veggie broth or water

  • 3 Tbsp. white or red miso paste

  • ¼ tsp. salt or to taste

  • ¼ tsp. pepper or to taste

  • 16 oz. pasta, potatoes, or rice of choice

  • Garnish with red pepper flakes for a bit of spicy flavor. Hot sauce on the side for people who like it a little extra spicy.

Instructions:

  1. In a medium pot, saute the diced onion in a hot pan for about 5 minutes, until it just starts to brown. Add a small amount of water at a time. 

  2. Add the garlic and cook for another minute.

  3. Then add the sliced carrots, cashews, and veggie broth or water. Bring it to a boil and cook, covered with a lid, for about 15-20 minutes, until the carrots are tender.

  4. Transfer everything to a high speed blender, add salt, pepper, miso paste and process until very smooth.

  5. Mix the Carrot Pasta Sauce with hot pasta, rice, potatoes or to a buddha bowl. 

Tips:  Add extra veggies: Toss in roasted vegetables (mushrooms, broccoli, asparagus, etc.)   You can also add a handful of fresh spinach or kale after combining the sauce together. Add a cup of peas to quickly blanch in with the pasta at the last minute.
