Date Energy Balls

Ingredients:

  • 1 cup pitted Medjool dates (about 12-15 dates)

  • 1 cup raw almonds (or any nut of choice)

  • 2 tbsp chia seeds or flaxseeds (optional for extra fiber)

  • ½  tsp vanilla extract

  • 1 tbsp of nut butter

  • 2 tbsp cacao powder (or cocoa powder for a chocolatey flavor)

  • pinch of mineral salt

  • 1-2 tbsp water (if needed)

Instructions:

  1. Prep the Dates: Soak the dates in warm water for 10-15 minutes if they are not soft and fresh. Drain well.

  2. Blend the Ingredients: Add the dates, almonds, chia or flaxseeds, nut butter, vanilla extract, cacao powder, and salt to a food processor or high-powered blender.

  3. Process Until Sticky: Blend the mixture until it starts to stick together. If needed, add 1-2 tbsp of water to help it blend smoothly.

  4. Form the Balls: Scoop out tablespoon-sized portions of the mixture and roll them into balls.

  5. Chill and Serve: Place the balls on a tray and refrigerate for at least 30 minutes. Enjoy!

Optional Variations:

  • Roll the balls in shredded coconut, cocoa powder, or chopped nuts for added texture.

  • Add a bit of cinnamon or nutmeg for extra flavor.
