Date Energy Balls
Ingredients:
1 cup pitted Medjool dates (about 12-15 dates)
1 cup raw almonds (or any nut of choice)
2 tbsp chia seeds or flaxseeds (optional for extra fiber)
½ tsp vanilla extract
1 tbsp of nut butter
2 tbsp cacao powder (or cocoa powder for a chocolatey flavor)
pinch of mineral salt
1-2 tbsp water (if needed)
Instructions:
Prep the Dates: Soak the dates in warm water for 10-15 minutes if they are not soft and fresh. Drain well.
Blend the Ingredients: Add the dates, almonds, chia or flaxseeds, nut butter, vanilla extract, cacao powder, and salt to a food processor or high-powered blender.
Process Until Sticky: Blend the mixture until it starts to stick together. If needed, add 1-2 tbsp of water to help it blend smoothly.
Form the Balls: Scoop out tablespoon-sized portions of the mixture and roll them into balls.
Chill and Serve: Place the balls on a tray and refrigerate for at least 30 minutes. Enjoy!
Optional Variations:
Roll the balls in shredded coconut, cocoa powder, or chopped nuts for added texture.
Add a bit of cinnamon or nutmeg for extra flavor.
