Vegan Sushi Rolls with Peanut Sauce


Ingredients

For the Sushi:

  • 2 cups sushi rice

  • 2 1/2 cups water

  • 5 sheets nori (seaweed)

  • 1 avocado, thinly sliced

  • 1 carrot, julienned

  • 1 cucumber, julienned

  • 1 red bell pepper, julienned

For the Peanut Sauce:

  • 1/4 cup natural peanut butter

  • 2 tablespoons soy sauce, tamari or coconut aminos

  • 1 tablespoon rice vinegar

  • 1 tablespoon maple syrup or agave nectar

  • 1 teaspoon grated ginger

  • 1 clove garlic, minced

  • Water to thin, as needed

Instructions

Prepare the Sushi Rice:

  1. Rinse the sushi rice under cold water until the water runs clear.

  2. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, or until the water is absorbed and the rice is tender.

  3. Remove from heat and let the rice sit, covered, for 10 minutes.




Assemble the Sushi Rolls:

  1. Place a bamboo sushi mat on a flat surface and cover it with plastic wrap.

  2. Place a sheet of nori on the mat, shiny side down.

  3. Wet your hands with water to prevent the rice from sticking. Spread a thin layer of sushi rice over the nori, leaving about 1 inch of the top edge uncovered.

  4. Arrange a few slices of avocado, carrot, cucumber, and red bell pepper horizontally across the center of the rice.

  5. Using the bamboo mat, carefully roll the sushi, applying gentle pressure to ensure it's tight. Seal the roll by moistening the uncovered edge of the nori with water.

  6. Repeat with the remaining ingredients.

Slice the Rolls:

  1. Using a sharp knife, slice the rolls into 1-inch pieces, wiping the knife with a damp cloth between cuts to prevent sticking.

Prepare the Peanut Sauce:

  1. In a small bowl, whisk together the peanut butter, soy sauce or tamari, rice vinegar, maple syrup or agave nectar, grated ginger, and minced garlic.

  2. Add water a little at a time until you reach your desired consistency for dipping or drizzling.

Serve:

  1. Arrange the sushi rolls on a platter.

  2. Serve with the peanut sauce on the side for dipping or drizzle the sauce over the sushi rolls.
